Our design & production assistant, Frances brought homemade ginger bread men into the office yesterday and they were just too good not to share!
Ingredients
250g brown sugar
¾ cup golden syrup
1 tsp mixed spice
1 tbsp ground ginger
190g butter
1 egg, beaten
3 ½ cups plain flour, sifted
½ cup self-raising flour, sifted
Combine sugar, syrup, spice, ginger and butter in a pot and stir over low heat until the sugar dissolves. Increase heat and stir until mixture boils. Remove from heat and cool to luke warm.
Beat in the eggs, then gradually work in the combined flours. Turn onto a lightly floured surface and knead until smooth. Wrap in glad wrap and chill for 1 hour.
Roll out dough and cut with your cookie cutter.
Bake in a preheated oven at 180 degrees for 10 min or until firm. Cool on a wire rack.
