To celebrate the last day of 2015 we've brought you a delicious cocktail recipe from our friends at Seafarers to complete your New Year's Eve merrymaking.

We caught up with Seafarers cocktail connoisseur, Kula to find out what delicious tipple he'll be drinking to welcome in 2016. Lucky for you he has passed on the recipe...

Cocktail Birds Eye

  • 45ml Tanqueray London Dry Gin

  • 20ml fresh lemon juice

  • 15ml simple sugar syrup

  • 15ml Liqueur de Violet

  • Soda water

  • Edible flowers

  • 1/4 lemon rind

  1. Measure and pour your Tanqueray London Dry Gin into a cocktail shaker
  2. Add fresh lemon juice, simple sugar syrup and Liqueur de Violet
  3. Add ice and shake well
  4. Strain into a tall glass with fresh ice
  5. Top with soda water and garnish with edible flowers and a twist of lemon

You'll be able to enjoy the new La Violet summer cocktail overlooking the harbour at Seafarers from early February 2016. If you're lucky, Kula might even make it for you.

Thanks Kula x

With summer well and truly here, we chatted to a few of our lovely RUBY friends about what you'll find them doing over the sunny months. We have rounded up their answers to create our very own RUBY bucket list of must-do activities for your New Zealand summer...

My summer officially starts the day I run and do my first bomb in to the deep end of the pool, after that it's official and all I need is wine and a good book!Kelly Thompson

My absolute favourite thing to do in summer is to ride my bike down to one of the Herne Bay beaches, with strawberries and watermelon in my bag, and spend the day sunbathing with a good magazine and swimming in the ocean.Jordan Rondel

I love spending as much time as I can at the beach (preferably somewhere in New Zealand) with friends over summer. I am a total beach baby and love nothing more than lying on the beach under an umbrella reading a book or magazine with a picnic basket full of my favourite food/drinks... Nothing makes me happier! - Julia Matthews

It’s a little bit naughty but so fun to go skinny dipping with friends in summer, so it’s a must do for me!Aroha Harawira

Swim in natural waters in a beautiful, untouched place- Australia has so many special options for exploringAmelia Zadro

Last summer I tried paddle boarding for the first time and I loved it! So I’m hoping that every summer from now on will involve relaxing paddles in the Whangamata harbour with my dad giving me all his pro tips.Lucy Slight

My favourite thing to do every summer is tanning, going for adventures at the beach and in the bush and bringing picnics with me! Being outdoors is the Yelich

A must-do every summer is to spend a day at any beach out of Auckland (preferably Waiheke), we are truly blessed with the beautiful beaches we have in New Zealand. I love to have BBQ's in the evening with all my friends, eating delicious, nourishing food. I've just learnt how to surf so fingers crossed I can surf this summer.Libby Matthews

Since the age of about 8, I’ve been towed behind a boat during summer, either bouncing along on a donut or skurfing, for the past quite a few years my preferred mode of sliding along the water is on a wakeboard. My favourite summer days are spent boating around the back of Matakana Island, just across the harbour from Mt Maunganui. - Rosie Kelway

I love to perch myself in the shade and paint. It's great because the paint dries faster. I can take advantage of the natural light lasting well into the evening, by which time it's nice and cool again! - Henrietta Harris

Every summer I have to take a trip to see my family who are scattered all around the lower South Island. It’s a chance to reconnect and recharge in the beautiful wide open spaces of Otago and Fiordland.Samantha Hayes

Skinny dipping!Natalie Cantell

My absolute favourite thing that I must do every summer is stay at my grandma's beautiful property in Bethlehem. Her house is so stunning and peaceful and her garden is truly beautiful - it feels like you are a million miles away!Jaime Ridge

My summer never feels complete unless I make the trip down to Onemana (a gorgeous little beach in the coromandel) and get to jump on my favorite little rope swing that sits atop a sand dune looking over the beach.Maddy Budd
