CHOCOLATE TRUFFLES

In RUBY Head Office and Yum! | 29 May 12

So following Frances's delicious Gingerbread men at work last week, the RUBY Head office bake-off has begun. Sara, our stock controller bought in these incredible chocolate truffle surprises this morning (great start to the week!).

How to make:

100g Butter
1/2 cup of brown sugar
2Tbsp cocoa powder
1tsp vanilla
1/2 cup of condensed milk
3 cups of vanilla biscuit crumbs
Block of chocolate - any kind & marshmallows

Melt all ingredients in a saucepan except the biscuit crumbs.
Wizz the biscuit crumbs until fine.
Pour crumbs into the liquid mixture until all mixed through.
Leave to cool for about an hour (good time to do that load of washing you've been putting off).

On a plate - pour out the coconut.
Take a heaped spoonful of the biscuit mixture, squash flat, grab a piece of chocolate and roll the biscuit mixture around the chocolate until you have a round ball.
Roll the ball in the coconut on the plate and place on a new plate.
Continue these steps until the mixture is all gone - alternating between the chocolate and marshmallows.

Place in the fridge to cool and wait until hard.
